16 ounce package of spaghetti noodles

20 ounces chopped spinach, thawed & drained

15 ounces ricotta cheese

3 eggs, beaten

1/2 cup grated Parmesan cheese

2 green onions, sliced thinly

1/4 teaspoon of pepper

1/8 teaspoon ground nutmeg

27 1/2 ounces spaghetti sauce

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon garlic powder

12 oz of shredded Mozzarella cheese


Start by cooking the spaghetti as directed on the package then drain. Mix together spinach, ricotta, eggs, Parmesan, green onions, pepper & nutmeg in a medium bowl. Combine spaghetti noodles, spaghetti sauce, basil, oregano, and garlic powder in a large bowl. Place half of the spaghetti mixture in a 12.5 x 8.5 baking dish. Spread spinach mixture over the spaghetti. Sprinkle on half of the mozzarella cheese. Top the dish with the rest of your remaining spaghetti mixture. Cover everything and bake for 25 minutes or until hot and bubbling. Sprinkle on the remaining mozzarella cheese and bake for 5 more minutes. Let it cool down for 10 minutes before serving.

4 green bell peppers

1 can of black beans, rinsed & drained

1 cup of shredded pepper jack cheese

3/4 cup of medium salsa

1/2 cup frozen corn

1/2 cup chopped green onions

1/3 cup uncooked long grain white rice

1 teaspoon chili powder

1/2 teaspoon ground cumin

1 jar sour cream (optional)


Chop a thin slice off the top of each bell pepper. Remove seeds & membrane until you’re left with an entire pepper. Combine beans, cheese, salsa, corn, green onions, rice, chili powder, and cumin in a medium bowl. Spoon the filling evenly inside the opening of the peppers. Place peppers in your slow cooker. Cover and cook on low for 4-6 hours. Serve with a fat slab of sour cream, if you’d like.

Heat up the vegetable broth in a 12-inch skillet over medium-high heat until it comes to a boil. Reduce heat to low then cook for 3 minutes or until the noodles are tender. Stir in the soup, tomatoes, and spinach into the skillet. Cook for 5 minutes or until mixture is bubbling and hot. Remove the skillet from the heat. Spoon the ricotta cheese on top and sprinkle on mozzarella cheese. Let cool and serve.
